BBQ Spaghetti Squash Ribs are a great way to substitute the taste of BBQ ribs without the meat. With the price of groceries these days, this is a more cost effective way to enjoy BBQ and save some cash.
I love this recipe because spaghetti squash is so underrated. The majority of spaghetti squash recipes involve some type of tomato sauce or pasta substitute. This is an elevated and creative way to give spaghetti squash a new perspective.
You can easily make this recipe vegan by substituting the butter for vegan butter or even a neutral vegetable oil. BBQ Spaghetti Squash Ribs are awesome for a summer cookout or just a weeknight dinner, it definitely takes a lot less time to make than meat ribs and it still has that pull apart, messy factor to it.

BBQ Spaghetti Squash Ribs
Ingredients
- Spaghetti Squash 1 large or 2 small
- ½ cup Melted Butter or substitute vegan butter
- ¼ cup Brown Sugar
- ¼ cup Yellow Mustard
- ½ tsp Turmeric
- 1 tsp Paprika
- ¼ tsp Crushed Red Chili Flakes
- 1 tbsp Liquid Smoke
- 2 tbsp Soy Sauce
- ¼ tsp Black Pepper
- 4 Garlic Cloves crushed
- Garlic Salt to taste
Instructions
- Preheat the oven to 400F degrees.
- Wash and dry the outside of the spaghetti squash. On a cutting board, cut off the stem and the bottom of the squash. Make sure the spaghetti squash is on a stable spot and it won't roll easily. Take your knife directly down the middle longways and start to wiggle the knife into the squash. Press firmly until the squash is cut in half. Scoop out all the seeds.Once the squash is cut in half, cut the "ribs" simply by slicing the squash in 1.5 in pieces.
- In a bowl, mix the rest of the the ingredients.
- On a parchment lined baking sheet, arrange the squash in a single layer.
- Brush the sauce on both sides of the squash and really get all the flesh covered, do not brush the skin with sauce. reserve any remaining sauce for basting and dipping.
- Bake for 10 minutes. Flip the squash and bake for another 10 minutes.
- Broil on low for 5 minutes, or until a nice char starts to form.
- Brush the squash with more sauce and enjoy!
