Oh, Del Taco. I have missed you…
Due to the COVID 19 restrictions on the Canada/USA border, I haven’t been home to Southern California in over a year. To say I’m homesick is an understatement. Recreating my favorite foods has been my therapy lately.
Some of my fondest memories of Del Taco was ditching high school my senior year with my little sister and getting chicken soft tacos (sorry mommy). At the time, they were a whopping $0.79 cents! We used to scrounge up any change we had: bottom of our purse, car cupholder, change jar…. quarters were as good as GOLD! We’d go to the drive thru and hand the poor cashier handfuls of coins! Then we would drive to somewhere cool (middle of the desert probably), blast our music and devour our tacos in the car. It seems like such a different time, I wonder if kids still do this? I hope so….

COPYCAT Del Taco: Chicken Soft Tacos

Directions
- Step 1
- For the chicken: Add all the ingredients in a bowl. Combine well and set aside for at least 20-30 minutes.
- Step 2
- For the Secret Sauce: Combine mayo and lime juice until smooth. Set aside until assembling the tacos.
- Step 3
- Sauté the chicken in a little bit of oil on medium high heat until lightly golden brown and cooked through.
- Step 4
- Use taco size tortillas. Fill with chicken, a drizzle of secret sauce, shredded lettuce and sharp cheddar. Add hot sauce if desired.
