I lived in Costa Mesa for almost 10 years. There is so much to love about Orange County: the beaches, the food, the weather. But my absolute favorite thing was always right on time at 5:45pm every night.
What is that? You might ask….
I’d hear a horn on the street and know the Elotes Man was out there. I’d grab my cash and run to get the best Elotes and Mangonada! Sometimes that would be my dinner all in its own. There is literally nothing better, especially on a hot summer night. Ahh, the bachelorette days!
Elotes will always have a soft spot in my heart and the classic way will always be home for me. While mine will never be as good as the Elotes Man’s, this is how I make it when I miss Southern California. Enjoy!
Classic Elotes

Ingredients
- 5 Prepared Corn Cobs- boiled, grilled or air fried
- Good quality mayonnaise like Best Food or Hellman’s
- Grated Parmesan Cheese
- Tajin
Directions
- Step 1
- Prepare the corn to your liking.
- Step 2
- For air fryer instructions: shuck and clean the corn. Rub with butter or oil and air fry for 22 minutes at 350 degrees. Turn halfway through.
- Step 3
- Brush with mayonnaise.
- Step 4
- Coat with Parmesan cheese.
- Step 5
- Sprinkle Tajin on top. Enjoy!
