I saved the best for last! My elotes inspired corn series is coming to an end but I am concluding on a very high note. This corn will be unlike anything you’ve ever had and it is truly unique.
This Middle Eastern Corn is inspired by my husband, Nasry. He is originally from Iraq and prior to meeting him, my cooking lacked any Middle Eastern influence. Now, I can’t get enough! I love asking his mom and sister how to make their dishes, researching other recipes and experimenting with all the new flavors in my life. I’m sure I will be posting more on that down the line, there is just so much to catch up on!
For this recipe you will need two ingredients that you may have never heard of (depending on where you are reading this from). Toum is a garlic sauce that is super creamy and has a kick to it purely from the garlic itself. You can find this at the Middle Eastern grocery store, at a Middle Eastern grill/restaurant or you can make it yourself. It’s basically a garlic aioli. If you do not wish to make toum from scratch, you can simply add 5 cloves of crushed garlic to 1/2 cup of mayonnaise and a squeeze of lemon. This is obviously not the same but it will do for this purpose.
The second ingredient is za’atar, it’s a spice blend that is fairly accessible, they even carry it at Trader Joe’s now. It has thyme, sumac and sesame seeds in it. It’s great sprinkled on anything or even just to dip in bread with some olive oil.

Ingredients
- 4 Prepared corn- boiled, grilled or air fried
- 1/2 cup Toum- see blog for substitutions
- Finely Crumbled Feta
- Za'atar
Directions
- Step 1
- Prepare the corn to your liking.
- Step 2
- For airfryer instructions: shuck and clean the corn. Rub with butter or oil and air fry for 22 minutes at 350 degrees. Turn halfway through.
- Step 3
- Brush with Toum.
- Step 4
- Coat with Feta.
- Step 5
- Sprinkle Za’atar on top. Enjoy!
