It feels wrong giving this recipe out.
Every time I make this for someone they instantly get addicted to it, like I am (and I have been an addict since the 90’s). It’s like this dish gets implanted in your brain and when you crave it, nothing else will do, you HAVE to get this in your belly ASAP. I think it’s technically a casserole, but this is the most elite casserole of them all. It’s the Ferrari of casseroles.
My momma is a phenomenal cook and growing up she would make this pretty often because everyone adores it! She would even make it for our birthday dinners, it’s that good. It’s one of the only dishes that has stood the test of time in my family and we all still agree on it. I have even gotten my husband hooked now!
Serve this on a bed of mashed potatoes and a side salad, you know, for balance.

Ingredients
- The Breasts and Thighs of a Rotisserie Chicken, Shredded
- 1lb Fresh Broccoli Florets
- 2 cans of Cream of Chicken Soup
- 2 cans of Mayonnaise
- Half a Lemon, juiced
- Dash of Salt and Pepper
- 3 cups of Cheddar, freshly grated

- Serve with Mashed Potatoes or Rice
Directions
- Step 1
- Preheat the oven to 350F.
- Step 2
- Shred the chicken directly in a 9×13 baking dish. Add the broccoli directly over the chicken.
- Step 3
- In a bowl, pour in the cream of chicken soup. Use the empty cans to measure the mayo and pour into the bowl, its equal parts. Add in the lemon juice, salt and pepper, mix well.
- Step 4
- Pour the soup mixture over the chicken and broccoli.
- Step 5
- Grate 3 cups of cheddar and add to the baking dish.
- Step 6
- Toss the all the ingredients together in the baking dish, make sure the sauce and cheese are incorporated with the broccoli and chicken.
- Step 7
- Bake for 1 hour until golden brown and bubbly. The edges will be crispy. Serve with mashed potatoes or jasmine rice.
