Cucumber Tea Sandwiches are the undisputed champions of tea time- it is known. These are such a classic, how could you not include them for your luncheon menu?
These Cucumber Tea Sandwiches are jazzed up with an herby cream cheese that adds so much flavor. I like to add parsley, chives, lemon zest and salt/pepper. My secret ingredient is a little mayonnaise, trust me, it works perfectly.
I also like to use milk bread from my local Asian grocery store. Milk bread is so soft and pillowy- its like a cloud. The bread is ever so slightly sweet that it accompanies the cucumbers so nicely. If you cannot find milk bread, classic white bread will do the trick.
Make sure to cut off all the crusts and cut diagonally, a sharp serrated knife works best. Line the Cucumber Tea Sandwiches on tray to make it look extra special and fancy. Enjoy!
Cucumber Tea Sandwiches
Ingredients
- 8 oz Cream Cheese Room Temperature
- ½ cup Mayonnaise
- 3 tbsp Parsley Fresh, chopped
- 3 tbsp Chives Chopped
- 1 Lemon Zested
- Salt and Pepper to taste
- 1 English Cucumber or any smooth skin cucumbers
- 4 slices Milk Bread or White Bread
Instructions
- Make the spread by adding cream cheese, parsley, mayonnaise, chives, lemon zest and salt/pepper to a bowl and mashing until well combined.
- Slice the cucumber into thin slices, about ⅛ of an inch.
- To make each sandwich, take two pieces of bread and spread the cream cheese mixture evenly from crust to crust. Make sure to get a good layer everywhere on the bread, even the corners. Layer the cucumbers into 2-3 layers on one side of the bread to make sure every space is covered with a cucumber. Close the sandwich by firmly pressing the other cream cheese side down onto the cucumbers. Repeat this step to make 2 (or more) of these sandwiches.
- Place the two sandwiches on top of each other and refrigerate for at least 1 hour- this will help set everything and it will be easier to cut.
- Once the sandwiches are cold, use a serrated knife to evenly cut off the crust. Cut into rectangles "fingers" or diagonally for triangles.
- Place nicely on a serving tray and enjoy.
