It’s that time of year again! Halloween is here!
I have been making this appetizer for a couple years now, I originally saw it in a magazine and I added the Amy touch. It’s always a hit. I love the colors with the basil, heirloom cherry tomatoes and fresh mozzarella.
Now that I have a toddler, he calls this appetizer “Spooky Eyes” so that’s why I call this Spooky Caprese!
I use 2 different sized circles, one is a frosting piping tip and the other a shot glass. Use whatever you have on hand to get the right sizes based on the basil leaves.
I love using multicolor heirloom cherry tomatoes, slice it and place them randomly over the mozzarella to create the spookiest of eyes! A drop of balsamic glaze is the perfect pupil that sometimes droops and makes it even spookier!
Enjoy! 🙂
