Cheesy Broccoli Rice Soup is what you need to make on a cozy night in!
The addition of rice makes this broccoli cheddar soup more filling and more able to stand on its own. I love the texture the rice adds to the soup as well. We eat this for dinner with some good sourdough- its a hearty meal but light at the same time.
I like to use sharp cheddar cheese and parmesan to really give this soup a salty, tangy bite that compliments the broccoli perfectly. I also add cooked basmati so that the rice doesn’t soak up too much more of the broth.
This soup is a bit nostalgic for me- My mom would make something similar to this when she would pick me up from preschool. I don’t know how I remember this (since I was 3 years old) but what can I say? I have loved food my whole life and built memories around it! I just remember harassing my mom for this soup so she had to make it regularly.

Cheesy Broccoli Rice Soup
Ingredients
- ½ cup Butter
- 1 Medium Onion
- ½ cup Shredded Carrots
- 5 Garlic Cloves crushed
- ¼ cup Flour
- 3½ cups Chicken Broth
- 3 cups Broccoli finely chopped
- 1 cup Half & Half
- 1½ cups Sharp Cheddar freshly grated
- 1½ cups Parmesan Cheese freshly grated
- 1½ cups Cooked Basmati Rice
- Salt and Pepper to taste
Instructions
- In a large pot, melt the butter and sauté the onion on medium high heat. Once translucent, add the carrot. Sauté until the carrot softens and add the garlic. Add salt and pepper to taste.Once aromatic, add the flour and cook for 2 minutes. Stir often.
- Add the chicken broth slowly and make sure the flour is fully incorporated.
- Bring the soup up to a boil and add the broccoli, cover and turn the heat down to med low. Simmer for about 10 minutes.
- When the broccoli is soft, add the half and half. Stir well and allow to come up to a boil.
- Start adding the cheese a handful at a time, making sure the cheese is fully melted before adding more.
- Add the rice and enjoy. Garnish with more cheese and back pepper.
