Lentils are great. They are super nutritious and I like the earthy taste, I find they are better on digestion than their cousins, beans. Oddly enough, lentils are one of the only healthy foods my toddler eats with no question. Dal is super flavorful, cozy and filling. It’s like a big hug for your soul, there’s just something so warming about it. Serve with naan and basmati rice, enjoy!

Ingredients
- 1 cup of lentils
- 4 tbsp oil
- 1/2 large onion, diced
- 1/2 large bell pepper or 2 jalapeños, diced
- 1 tomato
- 2 tbsp madras curry
- 1 tbsp turmeric
- 1 bouillon cube
- Salt and pepper to taste
- 3.5 cups water
Directions
- Step 1
- Garnish with fried garlic slices, shallot slices, toasted cumin seeds
- Step 2
- fresh parsley and cilantro.
- Step 3
- Sauté the onion until just translucent then add the pepper. When charred a bit, add the tomato. When the tomato has cooked down and the mixture becomes a paste add the spices. Toast for 1 minute.
- Step 4
- Add washed lentils and the water. Bring to a boil then lower to heat to a simmer. Cover and cook for 1 hour stirring occasionally.
- Step 5
- The lentils will soften and eventually dissolve into a thick stew.
- Step 6
- Serve with basmati rice and garnishes.
