Meatloaf is just so fun to make. You throw all the ingredients in a bowl, mix with your hands and let the magic happen!
This meatloaf recipe is especially fun because it’s definitely not your mama’s meatloaf, the flavors are going to make you want to make this over and over again. In fact, my husband asked me to make this again two night nights in a row!
Growing up, we would have the traditional meatloaf with Lipton onion soup seasoning and ketchup glaze on top. That still amazing and truly iconic, but this is just a nice refresher and a different take on the classic.
The Method:
Start by putting lean ground beef, egg, breadcrumbs and all the spices in a large mixing bowl and mixing with your hands to incorporate. Really get in there and make sure everything is mixed well.
Pat the meat into a loaf pan to ensure it will cook evenly and bake at 375 degree for 25 minutes.
Make a glaze of HP Sauce, honey, salt and pepper and coat the meatloaf well. Broil on low for 10 minutes to caramelize the glaze. HP Sauce is like a British ketchup, its very flavorful and slightly sweet.
After that, let it rest for 10 minutes and then you are free to cut into it! I like to serve it with my Greek Smashed Potatoes and a simple mixed greens salad.

Ingredients
- 1lb Lean Ground Beef
- 1 Large Egg
- 1/4 cup Plain Breadcrumbs
- 3 Cloves Garlic, minced
- 2 tbsp Dehydrated Onions
- 1 tsp Beef Bouillon Powder
- 1/2 tsp Dried Mint
- 1/2 tsp Dried Oregano
- 1/4 tsp Allspice
- 1/4 tsp Salt
- 3 Dashes of Worcestershire Sauce

Glaze: - 2 tbsp HP Sauce
- 1 tbsp Honey
- Salt and Pepper to taste
Directions
- Step 1
- Preheat oven to 375 degrees.
- Step 2
- Place the meat and seasonings in a large mixing bowl, mix with your hands to incorporate.
- Step 3
- Shape the meat into a loaf pan by lightly pressing down, this will ensure even cooking. Bake for 25 minutes.
- Step 4
- Mix together the HP Sauce, honey and salt/pepper and set aside.
- Step 5
- After 25 minutes, remove from the oven and add the glaze on top of the meatloaf.

- Broil for 10 minutes on low, it should be deeply caramelized and brown on top.
- Step 7
- Let rest for 10 minutes before cutting. Serve with potatoes and a salad.
