Grilled Halloumi, Watermelon & Peach Skewers are perfect for Summer! The cheese and fruit get a little smokey from the grill plus it’s salty and sweet, you can’t lose!
This pregnancy my only true craving has been fresh fruit. I’m lucky that I get to be pregnant during Summer with the best fruit available. Cheese has always been an obsession of mine so this combination really makes sense for my Grilled Halloumi, Watermelon & Peach Skewers.
I like to keep the chunks of halloumi, watermelon and peach a little larger than usual to make sure they don’t fall into the grill. You only need the skewers to get a couple char marks to make this super delicious, we aren’t looking to cook anything all the way through.
Top with fresh mint and balsamic vinegar glaze. This is optional, but I also like a sprinkle of za’atar on top as well, it add another layer of zestiness especially to the fruit. This is like a flavor explosion all on one skewer, almost like your own little grilled charcuterie board.
Give this a try for your next barbecue night and let me know how you liked it! Enjoy!
