I have yet to try the famous Pickle de Gallo by Grillo’s because it isn’t in Canada yet. I have been dreaming of it ever since I learned about it. I’m too impatient to wait for the border to open, so I looked up the ingredients and made it myself.
It’s salty, fresh and slightly tangy. Everything I look for in a pickle to be honest.
I liked it with tortilla chips best but potato chips are good with it as well. The next day I even threw the leftovers in potato salad and it was amazing. This recipe is a must try if you love pickles! Enjoy!
Grillo's Copycat Pickle de Gallo

Ingredients
- 1 cup Cucumbers
- 1/2 cup pickles
- 1/4 cup red bell pepper
- 1/4 cup red onion
- 1 crushed garlic clove
- Dash of garlic salt and pepper
- 1/4 cup to 1/2 cup of Pickle Brine, just enough to moisten the mixture
Directions
- Step 1
- Chop the cucumbers, pickles, red bell pepper and onions very fine and make sure they are all around the same size.
- Step 2
- Add all ingredients to a bowl and stir.
- Step 3
- Cover and refrigerate for 2 hours before eating.
- Step 4
- Serve with tortilla chips and potato chips.
