In the Summer, we eat far more veggies than the rest of the year. I like picking up vegetables at the famers market and just grilling them with olive oil, salt and pepper. Simplicity is key here. Theres nothing like it really.
One of my favorites is CORN. Corn season is the absolute best. Corn is good in everything and every way. I’ve never met a corn I didn’t like….
I thought it would be fun to try different versions of my beloved elotes. The first on I tried is an “Italian Style” version with pesto mayo and lots of parmesan cheese. Let me tell you, it did not disappoint. I love the testiness of the basil and the creamy, luscious texture. It’s definitely a keeper.

Italian Style Corn

Ingredients
- 5 Prepared Corn Cobs: boiled, grilled or air fried
- 1/2 cup Mayonnaise
- 1/4 cup Pesto, store bought is fine
- Grated Parmesan
- Red Chilli Flakes
Directions
- Step 1
- Prepare the corn to your liking.
- Step 2
- For airfryer instructions: shuck and clean the corn. Rub with butter or oil and air fry for 22 minutes at 350 degrees. Turn halfway through.
- Step 3
- Mix the mayonnaise and pesto in a small bowl.
- Step 4
- Brush with pesto mayonnaise.
- Step 5
- Coat with Parmesan cheese.
- Step 6
- Sprinkle red chilli flakes on top. Enjoy!
