A friend in high school taught me how to cook chilaquiles and now my whole family makes this amazing breakfast. We like to use red or green canned salsa, the little cans you get from Mexican markets. You can use fresh salsa too, I just like the canned for convenience. This recipe is easily customizable according to your liking. We usually don’t add any meat but you definitely can add chorizo, left over ground beef or shredded chicken. Top with an over easy or fried egg and it’s ready! Enjoy!

Ingredients
- 1/4 cup oil (your preference for frying)
- 10-12 corn tortillas
- 1 small can salsa verde
- 1/4 cup mozzarella
- 1/4 cup Monterrey Jack
- Salt and pepper
- Eggs, over easy or fried
Directions
- Step 1
- Cut the tortilla into strips and add to hot oil.
- Step 2
- Stir the tortilla and break apart bit, the edges will get nice a crispy.
- Step 3
- Once crispy and golden, add salsa and stir to incorporate.
- Step 4
- Turn the heat off and add the cheeses. Tuck the cheese in a bit and let the cheese brown on the edges.
- Step 5
- Cook the eggs to your preference.
- Step 6
- Plate the chilaquiles in a shallow bowl, top with the egg and garnish how you like. Serve with your favorite picante sauce.
