Puff Pastry Samosas
These vegetarian samosas are fun and easy to make!

Ingredients
- 3 yellow potatoes
- 3/4 cup green peas
- 4 tbsp ghee, plus more for brushing
- 1 tsp cumin seeds
- 3 green onions, chopped
- 1 tsp garam masala
- 1 tsp coriander
- 1 tsp salt
- 1 tsp amchur (dried mango powder)
- 1 tsp turmeric
- 1 tsp ginger powder
- 2 sheets puff pastry
Directions
- Step 1
- Boil the potatoes until tender and mash. Set aside.
- Step 2
- In a wok or sauté pan toast cumin seeds with ghee. After one minute add the green onions. Once the onions are softened, about 3 minutes, add the spices. Cut the heat and toast the spices for one minute.
- Step 3
- Add the potatoes and peas to the pan and mash once again to incorporate the filling.
- Step 4
- Set the mixture aside in a new bowl to cool slightly.

- Roll out the puff pastry and cut each sheet into 6 squares.
- Step 6
- Put the filling on the bottom corner and fold diagonally into a triangle. Take the reserve dough and fold over again. Pinch all corners of the dough to make a secure triangle.
- Step 7
- Place on a parchment lined baking sheet. Brush the top with ghee. Bake at 350 degrees for 20 minutes, until golden brown. Serve with chutney and enjoy.
