I have been dreaming of traveling lately, this is the longest I haven’t been abroad in… I can’t even remember. One thing that can always transport me is food. I had this Queso Frito for the first time in Puerto Rico and haven’t stopped dreaming about it. It’s literally just fried cheese but the texture, the saltiness, the sweet from the guava sauce…. it’s unreal. I had to eat it a few times while I was on the island, I just kept craving more! I use Halloumi cheese in my version, its a pretty good substitute for the local cheese they use in Puerto Rico. Enjoy with with a mojito and think of warmer days!
Queso Frito

Ingredients
- Halloumi cheese, cut into cubes

Guava Sauce - 1/4 cup Guava purée or paste
- 1/4 cup Pineapple juice
- Dash of cinnamon, as little or as much as you prefer

Garnish with Tajin (optional)
Directions
- Step 1
- In a small pot, bring the guava purée, pineapple juice and cinnamon to a boil then lower the heat and simmer for about 10 minutes. It should be reduced into a thick, shiny sauce.
- Step 2
- Cut and dry the cheese with paper towels.
- Step 3
- Shallow fry the cheese cubes (in canola or vegetable oil) on medium high heat. The cheese will burn easily, so keep your oil medium- medium high.
- Step 4
- Turn the cheese frequently to fry all the sides.
- Step 5
- Right after frying, place on a paper towel lined plate to drain any excess oil.
- Step 6
- Serve with the guava sauce and a sprinkle of tajin (optional).
