I am definitely obsessed with garlic. I am not ashamed of that. My fingers are permanently stained with the smell of garlic, I’m just used to it now.
The Holiday has to be one of my all time favorite movies, not just for Christmas. I watch it multiple times every holiday season, and even when I’m just in the mood, I watch it year round. It’s romantic and cozy, something about it just makes me feel safe. The music and humor are amazing.
PLUS, it has Kate Winslet, Jack Black and Cameron Diaz in it… AND JUDE LAW!
In the movie, both story lines mention Fettuccini Alfredo like its a Christmas tradition. Am I the only one who isn’t aware of this? We never had Alfredo for Christmas but I am always down for some creamy, cheesy pasta.
I like to add roasted garlic to mine, a lot of roasted garlic actually. When you smash roasted garlic and add some liquid it becomes creamy as well so its perfect for this. I also add ricotta cheese to give it a creamy, softer flavor aspect.
Whether you make this for Christmas or not, you will love this Alfredo sauce and get addicted to it quickly. Roasted garlic is a game changer and needs to be included from now on! Enjoy!
Roasted Garlic Fettuccini Alfredo
Ingredients
- 4 bulbs Roasted Garlic
- 1 lbs Fettuccini cooked al dente
- 3 tbsp Butter
- ½ cup Cream
- Garlic Salt & Pepper to taste
- 1 tbsp Garlic Powder
- ½ cup Ricotta
- 1 cup Parmesan freshly grated
- ½ cup Pasta Water
Garnish
- Parmesan
- Red Chili Flakes
Instructions
- Once the pasta is boiling in a separate pot, start on the sauce. In a large saute pan on medium high heat, melt the butter.
- Smash the roasted garlic into a paste.
- Once the butter is bubbling, add roasted garlic and sauté for 2 minutes.
- Add the cream and stir until everything is combined.
- Add garlic salt, pepper and garlic powder and stir.
- Bring the heat down to medium and add the ricotta. Stir.
- Add the parmesan and stir until melted.
- Add the pasta water and stir until combined.
- Add the strained pasta to the sauté pan, toss until noodles are coated. Add more pasta water if needed.
- Top with parmesan and red chili flakes. Enjoy!
