Salmon in Parchment Paper is a french technique that yields perfectly cooked salmon EVERY TIME. I’ve never over cooked this and I’ve made it at least a dozen times. This version has a slightly Asian flare but the marinade can really be anything you prefer. Try it and thank me later. Enjoy!

 

Salmon in Parchment Paper

Ingredients
  • 2 salmon filets

  • Marinade:
  • 2 tbsp stone ground mustard
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp grated ginger
  • 2 garlic cloves, crushed
  • 3 tbsp olive oil
  • Squeeze of lemon
  • Salt and pepper to taste

  • Sides:
  • 1 yellow potato
  • 1 cup of frozen green beans, thawed
  • 1 shallot, sliced
Directions
Step 1
Mix all the marinade ingredients and add the salmon, set aside for at least 20 minutes. 
Step 2
Preheat the oven to 425 degrees. Cut a piece of parchment paper, fold in half and cut into an oval with scissors. 
Step 3
On one half of the paper, line thinly sliced potatoes in a square, leaving plenty of room along the edges. Top with 1/2 cup of green beans, shallot slices and a generous drizzle of olive oil. Salt and pepper to taste. 
Step 4
Add the salmon on top and spoon a little extra marinade on top. Fold the parchment over and seal the edges by folding and crimping the paper until you have a nice crescent shaped package. 
Step 5
Bake for 14 minutes on a cookie sheet. Take the packages and place them directly on your plate. Rip it open and enjoy!
