Ingredients
- 1 lb of tomatoes, preferably cherry or grape
- 2 heads of garlic, cloves peeled
- 1/2 cup olive oil
- 3-5 sprigs of thyme
- 1 sprig of rosemary
- 2 bay leaves
- Salt and pepper
Directions
- Step 1
- Preheat oven to 300. Wash and dry tomatoes and place in oven safe dish with high sides. Add peeled garlic. Toss everything with olive oil, salt and pepper. Tuck the herbs in the tomatoes and bake for 60 to 90 minutes. The tomatoes should be wrinkled and juicy, the garlic should be lightly browned and soft. At this point, you can put in a mason jar and refrigerate for up to two weeks. Serve warm with pasta, bread, hummus or cheese.
