Leftovers are a real blessing, especially when you’re a mom. Sometimes trying to figure out what to make for dinner is harder than actually making dinner! All of a sudden you’re the one responsible for what everyone eats, its A LOT!
The beauty of leftover is that you can re-purpose them and the prep work is basically taken care of.
I started making this when I began hosting Thanksgiving dinner and we were left with TONS of leftovers. I hate wasting food so I try to re-purpose leftovers into something new and exciting! I don’t like eating the same thing over and over, so this way I feel like I’m on an episode of “Chopped”.

Turkey Shepherd's Pot Pie

Ingredients
- ~Leftovers~
- 1 cup Dark Meat Turkey, cubed
- 1 cup Stuffing
- 1/2 cup Frozen Peas
- 2 cups Gravy

- ~Topping~
- 1.5 cups Mashed Potatoes
- Dash of garlic salt and pepper
- 1 Egg
Directions
- Step 1
- Preheat the oven to 400 degrees.
- Step 2
- Mix the Turkey, stuffing, peas and gravy together in a bowl. Add to a loaf pan. Press the mixture until levelled.
- Step 3
- Mix the mashed potatoes well in a bowl with the egg and garlic salt/pepper.
- Step 4
- Add to the top of the gravy mixture and smooth it so that it’s flat on all corners.
- Step 5
- Use a fork to scrape the top into whatever design you prefer, I just lightly poke up the mashed potatoes so it browns better.
- Step 6
- Bake for 30 minutes until the top is golden brown and the edges are bubbling.
