Watermelon Mojitos are one of my favorite Summertime drinks! They are so refreshing and crisp, it just accompanies the sun so perfectly.
I really love any flavor of mojito but Watermelon Mojitos just feel different. Watermelon is a staple Summer fruit and it feels nostalgic in way. Plus, watermelon and mint are made for each other, its the best balance of zesty, sweet and cool.
I am currently pregnant, so I am using a Non-Alcoholic Rum made by Lyre’s Spirits Co. I love being able to make my favorite cocktails without having to adjust the recipe, I can just make cocktails ounce per ounce and it tastes the same! You can also use your favorite white rum with the same measurements as this recipe.
This recipe will make 2 Collin’s Glasses worth of Mojitos.

Watermelon Mojitos
Ingredients
- ¼ cup Watermelon Cubes
- 5-7 Fresh Mint Leaves
- 2 oz. Lyre's Rum or White Rum
- 1 Lime Zest Peeled and Juiced
- Sparkling Water or Club Soda
- 1 oz. Lime Simple Syrup More to taste if you like it sweeter
Lime Simple Syrup
- ¼ cup White Sugar
- ½ cup Boiling Water
- 1 Zest Peel of Lime
Instructions
- Make the Simple Syrup: In a glass measuring cup or a glass bowl add the sugar and boiling water. Stir until the sugar is dissolved. Peel the zest of one lime and add the zest to the hot simple syrup. Set aside to infuse.
- In a cocktail mixer, muddle the watermelon into a pulp.
- Slap the mint between your hands a couple times to release the oils and add the mint leaves to the mixture. Muddle until the mint is fragrant.
- Add the rum, ½ the juice of a lime (fresh squeezed) and simple syrup. Add ice and shake for 30 seconds.
- Strain and pour the mixture over fresh ice in a collins glass, only fill the glass ¾ of the way. Fill the rest with club soda or sparkling water. Garnish with lime wheels and more mint. Enjoy!
