Roasted Garlic Fettuccini Alfredo

Ingredients
  

  • 4 bulbs Roasted Garlic
  • 1 lbs Fettuccini cooked al dente
  • 3 tbsp Butter
  • ½ cup Cream
  • Garlic Salt & Pepper to taste
  • 1 tbsp Garlic Powder
  • ½ cup Ricotta
  • 1 cup Parmesan freshly grated
  • ½ cup Pasta Water

Garnish

  • Parmesan
  • Red Chili Flakes

Instructions
 

  • Once the pasta is boiling in a separate pot, start on the sauce. In a large saute pan on medium high heat, melt the butter.
  • Smash the roasted garlic into a paste.
  • Once the butter is bubbling, add roasted garlic and sauté for 2 minutes.
  • Add the cream and stir until everything is combined.
  • Add garlic salt, pepper and garlic powder and stir.
  • Bring the heat down to medium and add the ricotta. Stir.
  • Add the parmesan and stir until melted.
  • Add the pasta water and stir until combined.
  • Add the strained pasta to the sauté pan, toss until noodles are coated. Add more pasta water if needed.
  • Top with parmesan and red chili flakes. Enjoy!
