I’ve been away for a little while but I’m back and ready to start making new recipes! Motherhood called and I was feeling overwhelmed with everything so I needed to take a breather.
These Upside Down Sliders are inspired by the viral upside down pastries on TikTok, basically you just put whatever you want directly on parchment paper and top it with puff pastry. I wanted to do a savoury version so sliders seemed like a natural fit.
Oh wait, we absolutely need blue cheese for these Upside Down Sliders! The blue cheese sort of steamed into the puff pastry while it baked and infused the crust with that tangy, salty, sharp flavor we love! I think any sharp cheese will work as well.
Drizzle this with my Easy Black Pepper Aioli and you have a gourmet slider that is sure to make an impression.
This is definitely an easy way to make sliders for a party or a snack, it comes together so quick. You can even play around with the size and make them mini too!

Upside Down Sliders
Equipment
- Parchment Paper
Ingredients
- 6 Butter Pats
- Half an Onion Thin sliced
- 6-8 Cherry Tomatoes Thin sliced
- Worcestershire
- 12 oz. Lean Ground Beef Portioned into six, 2oz. balls
- Blue Cheese
- Garlic Salt & Black Pepper To taste
- 1 Puff Pastry Sheet Cut into 6 squares
- Egg Wash
Black Pepper Aioli
- ½ cup Mayonnaise
- ¼ cup Extra Virgin Olive Oil
- 1 Garlic Clove Crushed
- 1 tbsp Black Pepper Fresh cracked
- ¼ tsp Crushed Red Pepper Optional
Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- Add 6 pats of butter spaced out on the parchment.
- Top each butter pat with onions and tomatoes. Sprinkle with garlic salt, pepper and a few dashes of Worcestershire to each pile.
- Smash a ground beef ball into the pile and flatted with a metal spatula. Sprinkle some salt and add blue cheese directly onto the burger.
- Cover each burger with a puff pastry square and gently shape the dough to conform to the burger. Using a fork, crimp the edges of the dough. Brush with egg wash and sprinkle lightly with salt.
- Bake for 15-20 minutes, the puff pastry will be golden brown and risen.
- Make the Black Pepper AioliMix mayonnaise, olive oil, garlic, black pepper and red pepper flakes until well combined. Refrigerate until ready to use.
- Using a metal or thin spatula, scrape the bottom of the pastry and flip over ensuring all the components are intact and in place. Broil on low for 2-3 minutes just to char the top a little.
- Drizzle with aioli and enjoy!
