  • Blue Cheese

  • 1 Puff Pastry Sheet Cut into 6 squares
  • Egg Wash
Black Pepper Aioli
  • ½ cup Mayonnaise
  • ¼ cup Extra Virgin Olive Oil
  • 1 Garlic Clove Crushed
  • 1 tbsp Black Pepper Fresh cracked
  • ¼ tsp Crushed Red Pepper Optional

Equipment

  • Parchment Paper

Method

  1. Preheat the oven to 400F and line a baking sheet with parchment paper.
  2. Add 6 pats of butter spaced out on the parchment.
  3. Top each butter pat with onions and tomatoes. Sprinkle with garlic salt, pepper and a few dashes of Worcestershire to each pile.
  4. Smash a ground beef ball into the pile and flatted with a metal spatula. Sprinkle some salt and add blue cheese directly onto the burger.
  5. Cover each burger with a puff pastry square and gently shape the dough to conform to the burger. Using a fork, crimp the edges of the dough. Brush with egg wash and sprinkle lightly with salt.
  6. Bake for 15-20 minutes, the puff pastry will be golden brown and risen.
  7. Make the Black Pepper Aioli
Mix mayonnaise, olive oil, garlic, black pepper and red pepper flakes until well combined. Refrigerate until ready to use.
  8. Using a metal or thin spatula, scrape the bottom of the pastry and flip over ensuring all the components are intact and in place. Broil on low for 2-3 minutes just to char the top a little.
  9. Drizzle with aioli and enjoy!
