Pumpkin Spice season is upon us!
I know you may be thinking, “Oh gosh, pumpkin spiced ribs? How basic”… Well I’ll admit pumpkin spice has a bad reputation but it isn’t reserved for only candles and lattes. It’s just a blend of cinnamon, nutmeg, clove and ginger. So you can basically use it for anything and what’s better than some spiced ribs?
This is a hit with my family and everyone agrees its a great Autumn twist on the classic ribs that you don’t have to grill or smoke!

Pumpkin Spiced Ribs

Ingredients
- One Rack of Pork Ribs
- Yellow Mustard to Coat
- 10 cloves garlic, peeled
- 4 cloves garlic, crushed
- Salt and Pepper
- ~Dry Rub~
- 3/4 cup Brown Sugar
- 1 tbsp Salt
- 2 tbsp Pumpkin Spice
- 1 tbsp Garlic Powder
- 2 tbsp Yellow Madras Curry
Directions
- Step 1
- Preheat oven to 275F
- Step 2
- On a foil lined baking sheet, place peeled garlic cloves in a line and salt the area
- Step 3
- Rinse and dry ribs and place on top of the garlic cloves
- Step 4
- Generously salt and pepper both sides of the ribs
- Step 5
- Mix the brown sugar, curry, pumpkin spice, garlic powder and salt in a separate bowl for the dry rub
- Step 6
- Rub yellow mustard and the crushed garlic all over the ribs, massaging it with your hands into both sides. Add the dry rub on top and gently press and rub it in- reserve some of the rub for reapplication. Do not over apply because it will melt off.
- Step 7
- Take a sheet of foil and “tent” it over the ribs
- Step 8
- Cook for 2.5 hours covered and 1 hour uncovered. Check occasionally and re-applying rub as needed.
- Step 9
- Halfway through the cooking, take the garlic under the ribs and smash it into some of the pan drippings. Add a couple dashes of water and garlic salt. Then when the ribs are ready, put it in the microwave for 15 seconds and use it as a dipping sauce.
- Step 10
- The ribs are done when they are tender and the bones pull out easily. Enjoy!
