High Protein Egg Bites are the perfect way to start your day. Meal prep these ahead of time and your mornings will be a breeze.
I always find myself in a rush in the mornings.
I usually reach for whatever is already made or fast so that I don’t have to think about it, I seldom have the energy to cook until lunchtime. That is why I like to meal prep my High Protein Egg Bites to enjoy throughout the week.
Protein is huge in the morning, its what will fuel your whole day. Studies find that the more protein you eat the better your mood will be, the better your focus is and the better your digestion will be. Now, don’t get me wrong, I’m still obsessed with carbs and I believe carbs are our friends. However, a more protein balanced meal is more ideal in the long run.
Reheat these as desired in the microwave or try them in the air fryer for an amazing crispy crust. Keep these High Protein Egg Bites in the refrigerator for up to 5 days. Enjoy!
High Protein Egg Bites
Ingredients
- 10 Eggs
- 1 cup Cottage Cheese
- 1 cup Smoked Gouda grated, separated
- ½ Large Onion diced
- 12 oz Canadian Bacon diced
- 2 cups Vegetables whatever you prefer: spinach, zucchini, mushrooms.... etc
- Salt and Pepper to taste
Instructions
- Preheat the oven to 350F.Heat a large skillet and med-high heat and add some olive oil to coat the pan. Sauté the onion, Canadian bacon and vegetables until just cooked (translucent).
- Line a 9x13 pan with parchment paper and spread the cooked filling evenly on the bottom.
- In a blender, combine the eggs, cottage cheese and half of the grated gouda and process for 30 seconds. The mixture should be light in color and very smooth.
- Pour the egg mixture evenly over the onions, ham, vegetables and shift the bottom gently with a spoon to ensure all the filling is even at the bottom. Sprinkle the top with the remaining gouda.
- Place the pan in the oven for 25-30 minutes, until completely set.
- Let the egg mixture cool before transferring it to a cutting board and cut into squares.
- Refrigerate for up to 5 days and reheat the egg bites as desired. I like to air fry them for 5 minutes so the top gets a little crispy.
