Ingredients

  • 10 Eggs
  • 1 cup Cottage Cheese
  • 1 cup Smoked Gouda grated, separated
  • ½ Large Onion diced
  • 12 oz Canadian Bacon diced
  • 2 cups Vegetables whatever you prefer: spinach, zucchini, mushrooms.... etc
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 350F.
Heat a large skillet and med-high heat and add some olive oil to coat the pan. Sauté the onion, Canadian bacon and vegetables until just cooked (translucent).
  • Line a 9x13 pan with parchment paper and spread the cooked filling evenly on the bottom.
  • In a blender, combine the eggs, cottage cheese and half of the grated gouda and process for 30 seconds. The mixture should be light in color and very smooth.
  • Pour the egg mixture evenly over the onions, ham, vegetables and shift the bottom gently with a spoon to ensure all the filling is even at the bottom. Sprinkle the top with the remaining gouda.
  • Place the pan in the oven for 25-30 minutes, until completely set.
  • Let the egg mixture cool before transferring it to a cutting board and cut into squares.
  • Refrigerate for up to 5 days and reheat the egg bites as desired. I like to air fry them for 5 minutes so the top gets a little crispy.
