High Protein Egg Bites
Cheesy, smokey and silky- these will make you look forward to breakfast!

- 10 Eggs
- 1 cup Cottage Cheese
- 1 cup Smoked Gouda grated, separated
- ½ Large Onion diced
- 12 oz Canadian Bacon diced
- 2 cups Vegetables whatever you prefer: spinach, zucchini, mushrooms.... etc
- Salt and Pepper to taste
Preheat the oven to 350F.Heat a large skillet and med-high heat and add some olive oil to coat the pan. Sauté the onion, Canadian bacon and vegetables until just cooked (translucent). Line a 9x13 pan with parchment paper and spread the cooked filling evenly on the bottom.
In a blender, combine the eggs, cottage cheese and half of the grated gouda and process for 30 seconds. The mixture should be light in color and very smooth.
Pour the egg mixture evenly over the onions, ham, vegetables and shift the bottom gently with a spoon to ensure all the filling is even at the bottom. Sprinkle the top with the remaining gouda.
Place the pan in the oven for 25-30 minutes, until completely set.
Let the egg mixture cool before transferring it to a cutting board and cut into squares.
Refrigerate for up to 5 days and reheat the egg bites as desired. I like to air fry them for 5 minutes so the top gets a little crispy.
