This recipe may not be the quickest breakfast but it definitely pays off in flavor. All the classic breakfast components are there like bacon, eggs and potatoes… And some new additions like tomatoes, shallots and garlic, all in one amazing bite. It’s like the eggs almost get puffy when baked, so it feels very light and airy. Such a great take on classic breakfast.
Let’s just call it the new classic…
The best thing about this is its made in one baking pan, you just keep adding to the same pan, building on the layers of flavor. I especially like the downtime while the frittata bakes so that I have time to clean as I go. By the time it’s cooked, all I have to worry about is enjoying my breakfast.
I feel like this is a good and easy Sunday morning breakfast or even a good entertaining brunch recipe. You can double or triple the recipe and feed a crowd effortlessly. Thats the beauty of this frittata, it’s elevated enough to be fancy if you want it to be.
If you want to make this vegetarian, you can leave out the bacon all together. Just give the tomato mixture a good drizzle of olive oil before roasting. You can also add feta or white cheddar if you like, I would add it with the egg mixture so that it can melt within the eggs rather than it be on top.
Serve with your favorite breads and a nice fruit salad and you’ve covered all the bases. This Baked Frittata is a home run! Enjoy!
One Pan Baked Frittata

Ingredients
- 1 pint of cherry tomatoes
- 2 cups red or yellow potatoes, thinly diced
- 1 medium shallot, thinly sliced
- 5 slices of bacon, sliced
- Salt and pepper to taste

Egg filling - 8 eggs
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Pepper to taste
- 3 green onions, sliced
Directions
- Step 1
- Preheat the oven to 400 degrees.
- Step 2
- In an 9″x9″ baking dish, add the tomatoes, potatoes, shallot, bacon, salt and pepper. Give it a good mix in the dish and bake for 20 minutes.
- Step 3
- Take the dish out of the oven, stir the half cooked ingredients well and broil on low for 10-15 minutes until everything forms a nice browned color.
- Step 4
- Whisk the egg filling together and pour over the tomato mixture. Gently poke the eggs and the fillings to very slightly incorporate.
- Step 5
- Bake at 400 for an addition 15 minutes, the eggs will be set and slightly puffed.
- Step 6
- Serve while hot.
