When I worked at a fancy restaurant, I was introduced to the grilled artichoke. I never had one that wasn’t just boiled until tender and then dipped in melted butter.
We had artichokes that grew in our backyard when I growing up so I consider myself spoiled based on that! It actually blew my mind how many people either never had an artichoke before or didn’t know how to properly eat one. I found myself teaching my customers at this fancy restaurant how to eat an artichoke more times than I’d like to admit. Don’t get me started on how many times I would clear a half eaten artichoke or even all the leaves were untouched or sometimes, and worst of all, THE HEART WAS LEFT TO THROW AWAY!

Anyway, this grilled artichoke recipe is amazing. It’s only one step more than a normal boiled artichoke and it makes it SO much better. Enjoy!
Grilled Artichokes & Roasted Garlic Aioli

Ingredients
- Artichokes
- Water for a large pot
- 15-20 Black Peppercorns
- Dash of Salt
- ~For the Aioli~
- 2 heads of Roasted Garlic, smashed
- 2 tbsp Dijon Mustard
- 2 tbsp Cracked Black Pepper
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Garlic Powder
- 3/4 cup Mayonaise
- Dash of Garlic Salt
Directions
- Step 1
- Trim and prepare artichokes.
- Step 2
- Fill a large pot with water about half way and set to boil. Season the water with peppercorns and salt once boiling.
- Step 3
- Drop the artichokes in the boiling water and cover to cook. Boil for 25-30 minutes. When they are done, a knife will be able to poke through the heart located just below the stem. Place them in a colander to drain and cool.
- Step 4
- Mix the aioli ingredients together in a bowl and set aside until ready to eat.
- Step 5
- After the artichokes have cooled a bit, take a knife and cut the artichokes in half through the stem. Brush the open half with oil and sprinkle with salt and pepper.
- Step 6
- Grill on medium high heat for about 3 minutes on each side, I like to wait for a good grill mark.
- Step 7
- Serve the artichokes immediately with the aioli.
