Blender Salsa is the definition of Summer for me. It signifies that the freshest produce is ready to eat and you can just taste the sun in every bite. You can make this year round, but in Summer, it’s always better!
Growing up, my family had a big yard and we always had a vegetable garden. We would end up with hundreds of tomatoes that we needed motivation to consume, so my mom started making Blender Salsa that we could also jar up and share with friends. Using the blender allowed us to make a lot of salsa at once, now i don’t make as much but I still prefer the blender.
It became a tradition and we made huge amounts of this salsa every Summer. Our friends and family started demanding it so my mom started planting more and more tomatoes! We weren’t complaining though because it meant more salsa for us too!
Its just perfect to eat in the heat as well. I love eating this salsa with chips on my patio with a nice margarita or Mexican beer. It goes great on anything too: chips, tacos, eggs, burritos… the possibilities are endless!
The trick is puree the tomatoes, onion and garlic together until smooth. When you add the jalapeños and cilantro, it’s important to just pulse your blender so the jalapeños and cilantro remain chunky. If you don’t, the cilantro will pulverize and the salsa will be brown, still delicious, the color will just be off putting.
Give this recipe a try and let me know what you think! Enjoy!
