You can find Chapli Kebab throughout South Asia. I took inspiration from Pakistan, Afghanistan and India for this recipe and fused it with one of my favorite foods on the planet: BURGERS. The patty is so flavorful on its own but add it to a burger and you’ll feel like you might be in heaven. The tahini sauce is mind blowing too. To guarantee optimal flavor, make sure to use good quality spices for this. Teja Foods is a great brand with potent products and you can find them at local grocery stores/ Indian specialty stores.
This has become a definite staple in my kitchen, I can’t wait until summer so we can try these on the charcoal grill!

Ingredients
- For the patties:
- 1lb lean ground beef
- 1/4 onion, chopped
- 3 green onion, chopped
- 1 garlic clove
- 1/2 large tomato, chopped
- 1/4 cup parsley leaves
- 1 egg
- 1 tsp cumin seeds
- 1 tsp coriander
- 1 tsp turmeric
- 1 tbsp beef Knor
- 1 tbsp corn starch
- 6 dashes worsteshire

Tahini Cream:
- 1/2 cup tahini
- 1 small lemon
- 1 garlic clove
- 1/2 tsp cumin
- 1/4 cup water
- Salt and pepper to taste

Sumac Onions:
- 1/2 onion, thinly sliced
- 1 tbsp sumac
- Squeeze of lemon
- Salt to taste

Complete the Burgers:
- 6 buns of choice
- Arugula
- Tomatoes
Directions
- Step 1
- For the burgers:
- Step 2
- In a food processor, pulse the onions, garlic, tomatoes and parsley until finely chopped. Add the egg and blend until slightly frothy. Add the spices and pulse until mixed well. Add the ground beef and pulse a few times just until everything is incorporated in the beef, maximum 10 pulses.
- Step 3
- On a parchment lined tray, roll the beef into 6 equal balls then flatten each ball into a patty. Poke a hole in the middle of the patty. This will prevent the burger from shrinking.
- Step 4
- Cover and Refrigerate the beef for 2 hours.

- Pan fry in oil or grill the burgers and serve with your favorite topping and tahini cream sauce.

Tahini Sauce:
Add the tahini, lemon, garlic, cumin, salt and pepper to a bowl and whisk together. Add water in 2 tbsp increments, until pale and creamy.- Step 7
Sumac Onions:
Add onions, sumac, salt, pepper and lemon to a bowl. Stir and let sit for at least 10 minutes.
