I am big on one pan dinners.
Lately I have been feeling a little burnt out, being a toddler mom and wife is draining sometimes. Moms don’t ever get a break, even when I am feeling off I have to still show up “to work” for my family. I don’t really like fast food and only eat it as a last resort so it’s not like I can just order in. At the end of the day, I know that I need to put something wholesome on the table every night.
I am also a fan of this because there is only one cooking dish that you will need to clean. I also like that you prep everything then throw it in the oven for 45 minutes, it gives me a little time to reset and gather myself before dinner.
This is great to use as an opportunity to throw whatever you have in the fridge and create a good meal for your family and still feel good about your choices in life (haha). Whatever veggies work. I like to have a starch, a squash and a few alliums.
This is more of a guide instead of a recipe, you can adjust to whatever you have on hand or even switch the seasonings completely. I have made many different variations of this and have even used whole chickens before!

Greek Style One Pan Dinner
Equipment
- 13x9 Baking Dish
Ingredients
- 5 Chicken Breasts
- 1 Lemon juiced
- 3 tbsp Olive Oil
- 1 tsp Garlic Salt
- 2 tbsp Garlic Herb Blend
- 1 tsp Pepper
- ½ tsp Oregano
- 2 tbsp Za'atar
- 2 tbsp Chicken Boullion Powder
- 1 tsp Red Chili Flakes optional
- 1 tsp Paprika
Vegetables to fill halfway up the dish- Any Combination
- 1 Large Onion
- 1 head Garlic Cloves
- Potatoes, Sweet Potatoes
- Squash, Zucchini
- Bell Peppers, Tomatoes
- Brussel Sprouts, Broccoli
Seasoning for the Vegetables
- 1 Lemon juiced and zested
- ¼ cup Olive Oil
- 1 tsp Garlic Salt
- ½ tsp Black Pepper
- ½ tsp Oregano
- ½ tsp Rosemary
- 2 Bay Leaves
- ½ cup Chicken Broth
Instructions
- In a large bowl, marinate the chicken with all the listed ingredients and set aside.
- Preheat the oven to 400 degrees.
- In a 9x13 baking dish, chop the veggies into roughly the same size and add to the dish. Fill the dish with veggies halfway up the dish.
- Toss the vegetables with all the seasonings directly in the baking dish.
- Add the chicken directly on the bed of vegetables, spaced apart slightly.
- Bake for 45 minutes, until the chicken is fully cooked and a little browned on the top.
- Remove the chicken onto a separate dish to rest and broil the vegetables on high for 5-10 more minutes until browned a bit.
- Serve immediately and enjoy!
