Mango Guacamole

A little spicy and sweet, this will be your new favorite guacamole!

Ingredients
  

  • 3 Ripe Avocados
  • ½ Large Mango
  • 1 Jalapeno
  • 1 Red Baby Bell Pepper
  • 1 Shallot
  • 1 Small Tomato
  • ½ cup Cilantro chopped fine
  • 1 Lime separated into halves
  • Salt and Pepper to taste
  • Tortilla Chips for serving

Instructions
 

  • Make the Mango Pico de Gallo: Chop the mango, tomato, peppers, cilantro, shallot finely and add to a bowl. Squeeze half a lime and add salt/pepper to taste. Set aside.
  • In a large bowl, add the 3 avocados with the other half of the lime and salt/ pepper to taste. Mash until desired consistency.
  • Stir in half of the mango pico de gallo and scoop into a serving bowl.
  • smooth the guacamole then poke an avocado pit in the middle of the guacamole. This will help keep the guacamole fresh.
  • Top the guacamole with the remaining pico de gallo and serve with tortilla chips. Enjoy!
