Make the Mango Pico de Gallo: Chop the mango, tomato, peppers, cilantro, shallot finely and add to a bowl. Squeeze half a lime and add salt/pepper to taste. Set aside.
In a large bowl, add the 3 avocados with the other half of the lime and salt/ pepper to taste. Mash until desired consistency.
Stir in half of the mango pico de gallo and scoop into a serving bowl.
smooth the guacamole then poke an avocado pit in the middle of the guacamole. This will help keep the guacamole fresh.
Top the guacamole with the remaining pico de gallo and serve with tortilla chips. Enjoy!
