Airfried Manicotti

Ingredients
  

  • 24 Manicotti Shells cooked, rinsed and oiled
  • 2 cups Ricotta
  • 1 Large Egg
  • 1 cup Mozzarella freshly grated
  • ½ cup Parmesan freshly grated
  • 5 Strips of Bacon diced
  • 1 Shallot sliced
  • 6 Garlic Cloves crushed
  • 2 cups Baby Spinach rough chopped
  • Garlic Salt and Pepper to taste

Instructions
 

  • Cook the Manicotti to al dente according to the package. Rinse, drain and place on an oiled surface until ready to stuff.
  • Add the bacon to a hot pan (medium high) and cook until crispy. With a slotted spoon, take the bacon from the pan leaving the fat. Drain bacon on a plate with paper towel.
  • Sauté the shallot in the pan until a little color starts to form. Add the garlic and sauté for 2 minutes. Add the spinach and cut the heat. Sprinkle with a little garlic salt and pepper.
  • Stir the spinach until just wilted, set the pan aside to cool for 5 minutes.
  • Mix the ricotta and egg in medium sized bowl until well combined. Add the Mozzarella, Parmesan, garlic salt and pepper. Mix well.
  • Add the bacon and spinach mixture to the cheese and mix until combined.
  • Fill a ziplock or piping bag with the ricotta mixture. Put the uncut bag tip in a manicotti shell and cut just below where the tip and the shell meet, it should be slightly small than the manicotti opening. This will ensure the filling can get out of the bag easily.
  • Fill each manicotti with filling and place in the rack of your air fryer. Spray with cooking oil and sprinkle with more garlic salt.
  • Airfry at 400 degrees for 20 minutes, until crispy and golden brown. Flip once.
  • Serve with marinara and enjoy!
